I wanted to share one of our favorite recipes. This is made in the instant pot and is so easy! I have no idea why it has ‘mac & cheese’ in the name because there aren’t any noodles. But it’s delicious and keto friendly so give it a try. :)

Food Friday - Buffalo Chicken 'Mac & Cheese'

I wanted to share one of our favorite recipes. This is made in the instant pot and is so easy! I have no idea why it has ‘mac & cheese’ in the name because there aren’t any noodles. But it’s delicious and keto friendly so give it a try. :)

Buffalo Chicken Mac & Cheese

Ingredients

1 head of cauliflower, chopped

2 cups cooked chicken, cubed

1/2 cup buffalo sauce

1/4 cup ranch dressing

1/2 block of cream cheese, cubed

2 cups shredded cheddar cheese

Salt and pepper to taste

Directions

1. Add the cooked chicken, cauliflower, seasonings, buffalo sauce, and ranch dressing to the pot and mix.

2. Cook using the manual setting for five minutes. Allow the instant pot to release pressure on it’s own (about 25 min.).

3. Open immediately and stir in the cream cheese. Once fully combined, add the cheddar cheese and stir.

My Notes

I like to add blue cheese crumbles on top. It’s a delicious combo with the buffalo sauce.
