Food Friday - Chicken Jalapeno Popper Casserole
This is a great recipe when you want some great comfort food and something a little outside the norm of meat and veggies.

This is a great recipe when you want some great comfort food and something a little outside the norm of meat and veggies. :) Pair it with a spinach salad with some ranch dressing (I recommend Primal Kitchen for good quality dressing) and some red pepper flakes and you’ve got a great, filling meal.
Ingredients
- 5 large boneless chicken breast, chopped into bite sized pieces
- 12 oz cream cheese
- 1 cup sour cream
- 1/2 cup shredded cheddar cheese
- 10 bacon strips
- 1/2 cup jalapeño, minced and sliced
- 1 T minced garlic
- 1/2 tsp sea salt
- 14.5 oz can diced tomatoes w/jalapeños
Toppings
- 1/4 cup shredded cheddar cheese
- 5 bacon strips
- 1 diced jalapeno (optional)
Instructions
- Chop up the raw chicken. Combine the diced raw chicken, cream cheese, sour cream, bacon crumbles, shredded cheddar cheese, jalapeño, can of diced tomatoes, garlic powder, and sea salt in a large mixing bowl.
- Pour into a greased 9x13 baking pan. Top with the cheddar, bacon and sliced jalapeños (optional).
- Bake at 375F for 40 minutes or until bubbly and hot.
