Food Friday - Pizza Roll Ups

Need a good low-carb lunch idea? These are DELISH!!

Pizza roll ups

Ingredients

1-2 TBS Butter

2 Mozzarella slices

1 low carb tortilla

1-2 TBS pizza sauce

Shredded Parmesan to taste

Shredded mozzarella to taste

Toppings of choice

Garlic salt

Directions

Heat your butter in a skillet and cook your mozzarella slices in the butter just long enough they start to lightly brown on the bottom. Lay your tortilla on top for a minute or so. Flip the tortilla over and put sauce, cheese and toppings in the middle (doesn’t take much). Fold half the tortilla over then fold again. Drizzle the remaining butter across the top and sprinkle garlic salt on it.

Notes

Video shows 4 slices of mozzarella but I only use two. If you have a large tortilla you could do four but it’s pretty filling when it’s that much.

You can add toppings like black olives, pepperoni, sausage, onions…whatever pizza toppings you enjoy!
