Food Friday - Salmon with Avocado Lime Puree

I found this recipe in Keto Diet for Dummies by Rami & Vicki Abrams and at first I wasn’t sure how big of a hit this would be but I figured - I like salmon and I like avocado so I’ll give it a try. This was SO good! I definitely encourage you to try this recipe - and let me know what you think!

Salmon with Avocado Lime Puree

PREP TIME: 10 MIN | COOK TIME: 20 MIN | YIELD: 2 SERVINGS

INGREDIENTS

1 cup cauliflower, chopped

2 tablespoons fresh chopped cilantro

1 clove minced garlic

Salt and pepper, to taste

1 medium avocado

2 tablespoons canned coconut milk

1 tablespoon fresh lime juice

1 teaspoon coconut oil

2 6 ounce boneless salmon filets

2 tablespoons diced red onion

DIRECTIONS

  1. Place the cauliflower in a food processor and pulse into rice-like grains.
  2. Grease a large skillet and heat it over low heat; then add the cauliflower, cilantro, and garlic.
  3. Season with salt and pepper and cook, covered, for 8 minutes, until tender.
  4. In a blender, combine the avocado, coconut milk, and lime juice and season with salt and pepper.
  5. Blend until smooth and creamy; then set aside.
  6. In a large skillet, heat the coconut oil over medium heat.
  7. Season the salmon with salt and pepper.
  8. Add the salmon to the skillet and cook for 4 to 5 minutes on each side, until just cooked through.
  9. Spoon the cauliflower onto plates, top with a salmon fillet, and garnish with avocado lime puree and diced red onion.

My Notes:

  • I used riced cauliflower rather than using a food processor to chop it up.
  • I used coconut milk from a carton rather than from a can. We use it for other things and a carton is easier for me than a can.

If you have a small, hand-held blender that might be easier to make the puree. I did it in a full size blender and it was a little hard to get it all out from the bottom since it’s thick and not liquid.
