This is just a simple recipe of meat and veggies. Super easy to throw together when you want something easy. This recipe is from the book Complete Keto by Drew Manning. He says this is 1 serving but I found this to be plenty for the two of us. I think I used more than 5 ounces of meat though. You could add or subtract from the ingredients or even change up the veggies to suit your liking if you wanted. It’s super versatile. :)
Ingredients:
2 slices of bacon
1 cup chopped zucchini
1/2 cup chopped yellow squash
1/4 cup chopped onion
2 Tbsp avocado oil
1/2 tsp garlic powder
1 tsp paprika
Salt & pepper to taste
5 ounces of andouille smoked sausage, sliced
Directions:
Heat oven to 425º and line a baking sheet with parchment paper. Combine all ingredients in a large bowl and toss until covered well with oil and spices. Spread mixture on baking sheet. Bake for 20-25 minutes until bacon is cooked through and the vegetables are soft.
